Citrus Soy Brussel Sprouts with Caramelized Onions, Crispy Bacon


1 pound of brussel sprouts cut in half
1 red onion thinly sliced
4 slices of bacon
4 cloves of garlic minced
1 table spoon of minced ginger
2 scallions thinly sliced
1 orange zested
1/2 cup soy sauce
1/4 cup mae ploy sweet chili sauce
2 tablespoon of butter

Take 4 slices of bacon and over low to medium heat cook until crispy. Once bacon is cooked remove from pan and add in thinly sliced onions, slowly cook until caramelization has occurred. Turn oven to 450 and toss brussel sprouts in oil and roast in oven until cook thru and browned. Once onions are caramelized add ginger, garlic, scallion and sweat for 1 minute. Add soy sauce, mae ploy, orange zest and butter to pan and cook until sauce has thickened. Add roasted brussels to the pan and toss in the sauce. Season with salt and pepper if needed.
