If I’m giving up precious calories and carbs for pancakes, then they will only be for: made from scratch and super tasty ones!!!  Here is my favorite recipe! (Also my fav sides to go along with these delicious hotcakes are: thick cut bacon, fresh fruit, warm maple syrup and french pressed coffee)!!! TOTAL HAPPINESS!

Pancakes: (makes about 8 large or 12 medium ones)

What you will need:

  • 3/4 cup milk (I use whole milk for everything, but not a must)
  • 2 TBSP white vinegar
  • 1 cup flour
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 2 TBSP melted butter

What you will do:

  • in small bowl combine milk and vinegar and set aside for 5-10 min
  • mix dry ingredients together in separate bowl
  • lightly whisk the egg and butter in separate bowl with a fork, then add milk mixture
  • add wet and dry ingredients in a mixing bowl and mix until smooth
  • drop batter onto hot griddle and cook
