Tomato and Peach Salad

I can not get enough summer produce, two favorites of mine this season have been tomatoes and peaches (both of which we have a wonderful selection of in South Carolina).  One of my favorite things about eating out and ordering new dishes that I’ve never had before is being inspired by the dish and later on experimenting at home and coming up with my own version or something entirely new (completely worth the risk of complete failure-which happens often at my house) but this time I really came up with something delightful!  Im not exactly sure why I feel inspired to try out new things (specifically) on the occasions of having company over or when taking a dish to someones else’s house, but that is usually how I do it.  I needed a dish for a potluck dinner at a friends house and since I was feeling inspired and had picked up some great fresh fruits and veggies the day before at the farmers market this is what I came up, I hope you enjoy!

Tomato and Peach Salad with White Balsamic Vinegar

What you will need (makes about 6-8 servings):

-2 large tomatoes (I used 4 different kinds of heirloom tomatoes but only 1/2 of each one) and a dozen or so cherry tomatoes

-2 peaches

– 10-12 basil leaves

-1/2 medium or small red onion


-(white balsamic vinegar, olive oil, finishing salt, honey)

What you will do:

Bowl 1: Cut up the tomatoes in a variety of ways (I like to do them all different because it adds different shapes and texture to the dish, which I think makes it look more interesting). I slice them, dice them and cut small pie slices.  I cut the cherry tomatoes in half.  Slice the onion in thin long pieces and add to the bowl full of tomatoes.  Cut basil finely and mix in.

Bowl 2: Add 3 tablespoons of olive oil, 2 teaspoons of honey, 2 tablespoons of white balsamic vinegar.  Whisk it together well and then drizzle over tomatoes and peach mix.  Lightly stir in.  Sprinkle lightly with a few pinches of finishing salt.  Lightly spoon small amounts of mascarpone onto the peaches and tomatoes (I eye this to determine how much should be added (I’d estimate that its about 2 tablespoons total)).
